Impacto do pré dipping, padrão racial e ordem dos jatos de leite sobre a atividade microbiológica e físico-química do leite cru bovino

ABSTRACT: Dairy cattle farming is one of the main economic activities in Brazil, playing an important role in the income of millions of families and in quality food. The objective was to study the influence of the racial pattern and the dare of pre dipping on the microbiological and physical-chemical compositions of raw bovine milk. The study was carried out in Santana do Ipanema, a municipality located in the Brazilian Semiarid Region. The treatments consisted of the evaluation of the order of the jets, racial pattern (Girolando and Holonesa) and the adoption of pre dipping, each group had ten animals. The order of the milk jets promoted a linear decreasing effect (P <0.05) with a 94.27% reduction in the total bacteria count in the last milk jet, when compared to the first. The protein, density, defatted dry stratum and cryoscopic milk index had a decreasing linear effect (P <0.05) and the fat quadratic effect (P <0.05) as a function of the milk jets. The Racial standard does not interfere (P> 0.05) the count of total bacteria, protein, added water, cryoscopic index and milk density, however the Girolando breed has lower fat content and pH (P <0.05) of milk higher in relation to Holstein animals. The use of pre dipping reduced (P <0.005) the total bacteria count in 0.80 CFU mL-1 of milk. The advancement of milking (milk jets) and the use of pre dipping promotes a decrease in the bacterial load of the roof, justifying the need to dispose of the first three milk jets.
