Applicability of the Kanban method in milk refrigeration tanks

Considering that milk is a food that has a high facility for the development of deteriorating microorganisms and that multiply quickly, leaving this raw material unable to be used in production processes, this work aims to investigate the applicability of the Kanban method in raw milk refrigeration processes. With this, a Systematic Literature Review was carried out by searching for scientific articles, published between 1970 and 2021, in the SciELO, Scopus, and Web of Science databases. After a screening process, nine studies were selected that aimed to answer the following question: Is the Kanban method able to help ensure milk quality? It was verified that this method has several applications in the industry, since it reduces the time of processes making the work objective, however, in the process of milking and milk cooling no reported trials were found. However, from the experiences in other fields of the industry, aligned with the identification of which are the main causes of milk contamination, the method can be applied in order to minimize this bottleneck. Finally, we conclude that the purpose of using the kanban method in milking and raw milk storage activities is to make the milk handling and movement processes more agile and efficient, since this has already been experienced in other fields of the industry and can also help milk producers.
