ABSTRACT: The present study had as main objective the study of fatty acids performance by weight, soluble sugar in ºBrix, electrical conductivity (CE) and hydrogenation potential (pH) of the acerola conserved under modified atmosphere. It was used for the study of experimental design The randomized with five treatments (five maturation types, red, red, orange red, yellow and green), each of the treatments counted on 25 fruits. Twenty five wooden fruits were stored per tray, with polyethylene film in a modified atmosphere environment, for one to three days. It was verified the temperature of every 12 hours, being 7 days of duration and 19 hours, and was randomly completed with five fruits for the analysis of the parameters: Weight, Soluble Sugar in Brix, Electrical Conductivity, and pH. research was conducted at the State University of Alagoas (UNEAL / CAMPUS II), located in the region of Santana do Ipanema, in the State of Alagoas, with a total area of 437.8 km². The results obtained were analyzed by analysis of variance and as a means of comparison with the Tukey test at 5% of the use of SISVAR software 5,6. The fruits of color highlighted were the best values of Soluble Sugar in ºBrix, Electrical Conductivity and the highest ph value were found in green hearts, showing that the best results are obtained in fruits with a higher maturation stage.
